This is like the student classic ‘baked bean pie’ but with home made baked beans, this is good for 6 people.

For the bean mix

  • 3, 440g tins of beans such as haricot, borlotti, flageolet, cannellini
  • A mirepoix of 1 onion, 1 carrott and a stick of celery
  • A good handful of basil
  • A 440g tin or chopped tomatoes
  • 35ml of cider vinegar
  • A good pinch of salt and pepper
  • A tablespoon of tomato puree
  • 2 tablespoons dark demerera sugar
  • A couple of tablespoons of good olive oil

To finish

  • Enough mashed potato to completely cover the bean mix (10 potatoes or so)
  • Cheddar cheese to top

What to do

  1. Add the mirepoix to some basic olive oil and sweat down slowly for 5-10 mins
  2. Add and stir in the tomato puree, the tomatoes, sugar and the cider vinegar
  3. Simmer for about 10 minutes
  4. Add the beans and season to taste
  5. Simmer for a couple of minutes
  6. Add the chopped basil right at the end and stir in
  7. Place the entire mix into a baking dish, allow to cool slightly so the bean mix hardens a little
  8. Top with the mash potato
  9. Sprinkle with cheese
  10. Cook in a preheated oven at 200c for about 25 minutes
